Its easily the hardest and most frustrating part. But not as frustrating as a bunch of unevenly-sized onion pieces, half brown and half raw on the bottom of your soup pot.<br /><br />I'm planning some taste test experiments to determine the different tastes of various treatments of onions, and just how variable it is..
